Where we come from. "El Bahdja" means happiness and it's the key ingredient we add to everything we do and it's everything we want you to take away with you.
And why wouldn't you? With the vast choice of fresh ingredients: fruits, vegetables, meats, Mediterranean seafood and the subtle spices that go into all our authentic traditional recipes: and the nuts, honey and the orange and rose blossom waters that go into our sweet pastries ...who wouldn't V be happy?
So what makes North African cuisine so special?
As the gateway to Africa and the Mediterranean, the Maghreb (the countries of Morocco, Algeria, Tunisia, Libya and Mauritania) has been fought over, occupied and passed through by countless invaders and traders from the surrounding regions for over 3,000 years. Everyone from the Greeks, the Romans, the Turks, the Moors, the Spanish and more recently the French have been unable to resists the temptation to visit us. And along the way, each has left their influence on our region, our culture and our foods. Their legacy, together with oar own traditional recipes is an exciting combinations of spicy, sweet and subtle flavours to excite even the most well travelled palette.
